RESTRICTED AREA TOUR

Step inside Toyosu Market’s restricted wholesale area, a space normally closed to the public. This experience offers a deep dive into Japan’s seafood culture, focusing on how the finest fish are selected, from seasonality to fat content and texture. We will begins with an introduction to the market’s inner workings, guided by a chef with years of experience in Michelin-starred kitchens. You’ll learn the art of selecting seafood at its peak quality and meet expert vendors who supply Tokyo’s and world top restaurants. After visiting the restricted seafood section, the experience continues to Toyosu’s wholesale vegetable and dry goods market, where you’ll have the opportunity to browse and purchase unique Japanese ingredients. Lastly, if you’re interested, we can recommend a traditional Toyosu breakfast, where we can enjoy sushi all together prepared with the freshest market selections. The experience will be documented and shared to you, capturing moments as you explore.

RESTRICTED AREA TOUR +
FILLETING WORKSHOP

After the market tour, extend your experience with a tasting experience, fish filleting and cooking workshop. You’ll learn traditional techniques for filleting and slicing fish, the art of ike-jime (a method for preserving quality), and how to properly age seafood. The experience continues with the preparation of a dish based on the selected ingredients ending with a meal, where you’ll enjoy the seafood you have personally chosen at Toyosu Market. To complete the experience, we offer a small souvenir to take home as a reminder of your time at Toyosu Market.

SEASON TASTING NEW

Enjoy a refined tasting session built around the finest ingredients sourced directly from Toyosu Market that same morning. If visiting the market early is not ideal, you can simply join us for lunch, we’ll take care of the sourcing and preparation for you. The menu features a curated selection of seafood, including micro-seasonal fish, varieties of sea urchins, selections of rare shrimps, all selected for peak freshness and quality. For an added layer of exclusivity, a wagyu tasting can be added, featuring rare and prized cuts from our trusted supplier. This experience is perfect for those who want to explore exceptional ingredients and seasonal flavors without participating in the full morning tour, your lunch becomes a full-course tasting menu: a rare opportunity to enjoy Japan’s top ingredients in a private, curated setting.
